1-2 chipotles (from a can) + 2 tbsp of the chipotle juice
1 cup ripe mango, fresh or frozen
1 garlic clove or 1/2 tsp garlic powder
2 tbsp apple cider vinegar
2 tbsp lemon juice
If mango is not sweet, add 1- 2 tsp honey or agave syrup
Salt and pepper to taste
Put all the ingredients in a blender
Season to taste
Use the dressing and store the leftover in a container with a lid and leave it in the fridge. Use it within 5 days. A second option to store the leftover is to add it to an ice cube tray and freeze it, then transfer the cubes to an air tight container and use it as needed.
