Caprese & Arugula Salad

Who doesn't love caprese salad? It is so easy yet flavourful! Anyone would think that it cannot get better.... until it gets mixed with Arugula. If you are avoiding dairy, you are following a vegan diet or if you are trying to find new food combinations, you can use baked tofu instead of the cheese- you will love it!

Super Easy


  • 4 cups arugula

  • 1 tomato

  • 200g fresh mozzarella cheese or baked tofu

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 5 basil leaves, chopped

  • 1 tsp fresh oregano

  • salt and pepper to taste


  1. Wash the vegetables. Cut the tomato and the cheese/tofu in slices

  2. In a plate, put a bed of arugula and arrange the tomato slices and the cheese on top.

  3. Drizzle with the olive oil, balsamic vinegar and sprinkle salt pepper and chopped basil and oregano.

  4. Take a picture of it and put it on FB and IG (it will look beautiful!), then enjoy it!
