Bean, Tomato & Herbs Soup

There are some days when you have almost nothing in your kitchen but it is too late to go grocery shopping... but you still have to cook something and eat? Well, this recipe was born like that. I only had tomatoes, some baked kidney beans and a bunch of herbs, but it still ended up being delicious and it is great in terms of nutrients- protein and fiber from the beans, lycopene and other vitamins from the tomatoes and A LOT of flavour from the basil and the oregano.

Ingredients

  • 2 tomatoes

  • 2 cups kidney beans (or any type of beans you have)

  • 2 garlic cloves

  • some leaves of fresh basil and oregano

  • 4 cups vegetable broth

  • 2 tbsp chipotle

  • Salt and pepper to taste

For the garnish (optional):

  • fresh herbs (basil, oregano)

  • cheese

  • sour cream or greek yogurt

  • chopped avocado

  • chopped onion


Method

  1. Wash the vegetables.

  2. Put all the ingredients in a pot. Bring to a boil and then reduce to low temperature and simmer for about 15 min. Add more salt/pepper if needed.

  3. Serve and garnish

  4. Enjoy!
