Baby Kale & Bean Salad with Spicy Dressing

Ok, the name of the salad is a mouthful, but I promise it will be worth it! It is tasty and super easy to make than even your children can prepare it (as long as they know how to open a can!). It is good as a side, but also has all the components to be a whole meal on its own.

  • 4 cups baby kale, washed

  • 1/2 cup kidney beans, cooked or canned

  • 1/2 cup corn, frozen or canned

  • 1 avocado, sliced

  • 1/4 cup chipotle + mango dressing: mango, chipotle, garlic, lemon, vinegar, olive oil- get the full recipe here


  1. Wash the vegetables and open the cans if using any. Stray the beans and corn if they come from a can.

  2. Mix the baby kale, beans, corn.

  3. Top the salad with avocado slices and drizzle the dressing on top

  4. Enjoy!
